Ingredients
Juice of 1 lime
Large handful of fresh mint leaves
1 tbsp simple syrup (such as Monin)
100ml coconut rum
50ml coconut cream
100ml chilled soda water
To garnish:
Pomegranate seeds
Extra mint leaves
Instructions
- Half-fill two glasses with ice.
- In a cocktail shaker, combine lime juice and mint leaves. Gently muddle together to release the mint’s aroma.
- Add a large handful of ice, then pour in simple syrup, coconut rum, and coconut cream. Shake well until very cold.
- Strain the mixture evenly into the prepared glasses.
- Top each glass with 50ml chilled soda water.
- Garnish with pomegranate seeds and extra mint leaves before serving.
