Ingredients

Juice of 1 lime

Large handful of fresh mint leaves

1 tbsp simple syrup (such as Monin)

100ml coconut rum

50ml coconut cream

100ml chilled soda water

To garnish:

Pomegranate seeds

Extra mint leaves


Instructions

  1. Half-fill two glasses with ice.
  2. In a cocktail shaker, combine lime juice and mint leaves. Gently muddle together to release the mint’s aroma.
  3. Add a large handful of ice, then pour in simple syrup, coconut rum, and coconut cream. Shake well until very cold.
  4. Strain the mixture evenly into the prepared glasses.
  5. Top each glass with 50ml chilled soda water.
  6. Garnish with pomegranate seeds and extra mint leaves before serving.
